Roasted Cauliflower and Mushroom Carbonara Recipe



ingredients
  • 1 small head cauliflower that is cut into florets
  • 0.5 lb of quartered mushrooms
  • 1 tblspn  of olive oil
  • some salt and pepper to taste
  • 0.5 lb  fettuccine (or your favorite pasta)
  • 4 ounces of pancetta that is diced into 1 inch pieces
  • 1 chopped clove of garlic
  • 2 eggs
  • 1/2 cup of grated parmigiano reggiano (parmesan)
  • plenty of  black pepper
  • some salt to taste
  • 1 tblspn of chopped parsley
